I love this combination! Fresh, colourful, and delicious. This is how I make my sweet potato cubes:
1. Peel the sweet potatoes and chop into cubes around 2cm in size
2. Steam the cubes for 7-10 mins until tender
3. Heat a small scoop of coconut oil in a roasting dish in a preheated oven at 200c
4. Throw in the cubes and toss on the oil, then roast for 10 mins
5. Turn and sprinkle with salt, pepper, garlic powder and paprika
6. Roast another 10-15 mins until crispy with browned edges

Vegetarian Gyro inspired by my old dorm cafeteria at KU (Uni of Kansas)
Warburtons flatbread wrap (pita bread would be great too)
Veggie burger, cooked and chopped into bites
Chopped tomato and red onion
Cubes of feta cheese
Spinach or other leaves
Combine all into a tasty Gyro style wrap. Ideally you would have a nice Tzatziki (yoghurt sauce with mint) too but unfortunately I didn’t for this meal.

One of my favourite salads ever, I will definitely make this at home sometime. This portion is huge; enough for 3-5 people as a tapas dish. A meal in itself for 1 though I’d need some lettuce added to eat it on its own.

Mediterranean pasta salad (Sainsburys, Finchley O2)
2/5 - I needed a snack and this was all that appealed. I didn’t like the feta, and there was an excessive amount of slimy pepper and onion for my liking. The sauce was fine and I ate all the pasta. Not worth the price at all though, especially for such a small portion.
