Wrap with hummus, feta, red onion, roasted sweet potato, and garlicky spring greens (Home meal)

I love this combination! Fresh, colourful, and delicious. This is how I make my sweet potato cubes:

1. Peel the sweet potatoes and chop into cubes around 2cm in size
2. Steam the cubes for 7-10 mins until tender
3. Heat a small scoop of coconut oil in a roasting dish in a preheated oven at 200c
4. Throw in the cubes and toss on the oil, then roast for 10 mins
5. Turn and sprinkle with salt, pepper, garlic powder and paprika
6. Roast another 10-15 mins until crispy with browned edges

Buffet plate 2: Acorn squash, cabbage, broccoli, new potatoes, potato cake, tofu and mushroom roll (Terrace Pavilion, Parliament)

The tofu main was delicious. The “wrapper” was flattened bread, rolled up with the filling inside and then shallow fried.
