Preparing mock duck (Home meal)

You can buy mock duck in a can at Holland and Barrett. It’s essentially chunks of seitan with a texture imprinted on it to look like skin. It’s a bit pricey as substitutes go but compared to the real thing it’s probably still cheaper!

I like to marinate it all day in soy sauce with honey/agave, five spice and a little vinegar. Put it in a Tupperware and shake every 30-60 minutes.

When you’re ready to cook, heat some oil in a roasting dish in a medium hot oven. Add the marinated mock duck without breaking it up - it’ll look like the first picture.

Roast for around 45 minutes, flipping at 15 minutes intervals. When it’s ready the edges will be crispy and darkened. You can serve it “whole” or chop into bitesized pieces to serve. The picture on the right shows my chopped up mock duck; the marinade keeps it nice and juicy inside, but the edges will have a little crunch.

Flatbread pizza with meatfree burgers, salad and black bean salsa (Home meal)

Flatbread pizza recipe:

1. The base is a Warburtons square wrap.
2. The sauce is a mix of tomato purée, BBQ sauce and herbs & seasonings.
3. Top with grated mozzarella and sliced large flat mushrooms or portobellas.
4. Bake in a medium hot oven until crisp with golden, melty cheese.

Black bean salsa recipe:

1. Drain and rinse black beans
2. Add finely chopped red onion, tomato, cucumber and mint &/or parsley
3. Mix in with half a small can of sweetcorn (you can freeze the other half)

Slice green tomatoes into half centimetre rounds and season with salt and pepper. 
Dredge in flour, then beaten egg, and finally Panko breadcrumbs. 
Fry in plenty of hot oil until browned on each side. 
Drain on paper towels and serve immediately.

If you don’t like tofu, you’re doing it wrong.

Shallow fry in a medium hot frying pan; flip when one side is browned and crispy and add seasonings. Fry until the second side is browned.

1 serving flavoured yoghurt 
5-10 berries, chopped (I use frozen cherries and strawberries)

Roasted courgette pasta (Home meal)

Roast the courgette chunks in a medium-hot oven until just cooked but not mushy (7-10 mins). Add cooked pasta (I use spelt pasta), garlic, salt, pepper, olive oil and chili pepper flakes. Return to the oven for 5-10 minutes until the pasta is turning crusty in some parts. Serve with grated Parmesan style cheese.

Roasted sweet potato nuggets (Home meal)

Cut the potato into bite size chunks. Steam for around 7 minutes until a knife goes in easily. Roast with a little coconut oil in a preheated medium oven. Flip every 10-15 mins until browned and crispy edged. Near the end add seasonings and spices to taste.

If you don’t have time to roast, just steam the potato cubes for around 8 minutes, then shallow fry them in a hot pan with some coconut oil. Make sure you add some spices to complement the sweetness; I like a bit of garlic, smoked paprika, salt and pepper.

1. Toast the tortilla in a hot pan
2. Liberally squiggle with sriracha
3. Sprinkle with a small handful of grated cheddar cheese
4. Now add the main component: sautéed tofu cubes, mixed pulses, sliced mushroom and onions, seasoned with cumin, smoked paprika, salt and pepper. 
5. Squeeze a wedge of lime over the pile and drizzle with your favourite salsa or hot sauce (I used Heinz green chili sauce)
6. Top with mixed leaves, tuck and roll
7. If you want to serve it tidy, skewer it with a toothpick - just remember to take it out when you start wolfing it down

The tortilla pizza is peppers and mushroom with low fat cheddar cheese, baked in the oven until crispy. 

The Mexican chop salad is black beans, red onion, tomato, avocado, green and yellow peppers, served over lettuce.
