Roast the courgette chunks in a medium-hot oven until just cooked but not mushy (7-10 mins). Add cooked pasta (I use spelt pasta), garlic, salt, pepper, olive oil and chili pepper flakes. Return to the oven for 5-10 minutes until the pasta is turning crusty in some parts. Serve with grated Parmesan style cheese.
Cut the potato into bite size chunks. Steam for around 7 minutes until a knife goes in easily. Roast with a little coconut oil in a preheated medium oven. Flip every 10-15 mins until browned and crispy edged. Near the end add seasonings and spices to taste.
